Thai Cucumber Salad - Healthy, Fresh, A Little Spicy (Just like me)

MAIN COURSES

Coconut Jerk Peas with Pineapple Salsa - I throw in cubed sweet potatoes, black beans, edamame, whatever else that is similar.  it's delicious!  

Spicy Chickpea Veggie Burgers - Who needs beef or Impossible Burgers or whatever? You can make these much healthier options and they hit all the right notes. 

Easy Baked Tofu - Nice and crispy and healthy, you can throw it in almost any recipe.  

Lentil, Pea, and Potato Curry - A hearty curry to keep you warm and satisfied.  

Snobby Joes - A great substitute for Sloppy Joes.  Be careful of the 3 tablespoons of Chili Powder!  Go one tablespoon at a time and taste after each!  

Vegetarian French Dip Sandwiches - I cannot rave ENOUGH about how good and satisfying these are!!! If you have some caramelised onions around they make it

                                                  even better. 

Chili Garlic Tofu Bowls - Best eaten fresh, but phenomenally tasty and a great way to get friendly with Kale! 

Chickpea Tikka Masala - Easy, delicious Indian food that keeps you full!

Snobby Joes - Whole Food Plant Based, Oil Free delicious substitute for Sloppy Joes
